
#Chocollaboration Ep13: Simply Cheesecake
Cheesecake seems hugely popular in the North East (maybe it is everywhere!) and whenever I am doing a stall at a foodie event that "Simply Cheesecake" are at, I often watch in admiration as they sell like hot cakes. Ally started up her cheesecake business in 2013, and quite simply, she has built up a wonderful reputation. With simple fresh ingredients and loads of flavours to choose from, she has been providing cheesecake treats from markets and food festivals, and she's incredibly hardworking. From our guest interview at the start of the evening, Ally is so open and honest about the tough times of recent years, the spiralling cost of ingredients, and other business expenses. Throughout it all, she has shown great perseverance, and the cheesecake journey carries on, tonight, into the world of chocolate!

Ally was kind enough to demonstrate her methods for making the cheesecake mix; whipping the cream to stiff peaks, and whisking in the cream cheese and icing sugar. Having created the base mix, the chocolate challenge was to create your own mini cheesecakes, choosing which biscuits to make the base from (Oreo, Digestive, Biscoff or Gingernut), and then choosing what to flavour your cheesecake mix with. With lots of fresh fruit, as well as fruit concentrates to choose from, and other additions such as honeycomb or meringue, it was a very creative process, and the results were delicious!
The highlight of the evening for me was making 'Chocolate Cheesecake Truffles'; piping cheesecake mixture into hollow chocolate spheres, and rolling them in biscuit crumbs for an 'inside out' mouthful of cheesecake. Of course, the challenge was to create your own flavours and textures to put your stamp on these chocolate balls of cheesecake, and they worked a treat.
It was a hugely popular evening, and with the winning combination of some of our favourite foods, it was a #chocollaboration workshop that I think we will want to be repeating!
